Recipe of the Week

Ingredients

  • 1 1/2 cups shredded zucchini
  • 6 eggs
  • 1/4 cup melted butter
  • 3/4 cup coconut flour
  • 1/4 cup raw honey
  • 2 Tbsp. vanilla
  • 3/4 tsp. baking soda
  • 1 1/2 Tbsp cinnamon, (more or less as desired)

Instructions

  1. Preheat oven to 350 degrees
  2. Line bread pan with parchment paper
  3. Combine all wet ingredients and stir until well mixed
  4. Add dry ingredients and mix well
  5. Stir in zucchini and make sure to mix well again
  6. Pour into pan and bake for about 50 minutes
  7. Let cool for 5-10 minutes before serving
  8. Enjoy!!

Notes

Optional:

  • 1 cup of chocolate chips 
  • 1 cup chopped walnuts
  • 1/4 cup coconut oil in place of butter if you need to make it dairy-free
